Kristen’s Summer Grilled Corn & Strawberry Radish Salad

Hey guys, Kristen Vander Hoeven here…it’s been a while but I am back in the kitchen with Sasha and excited to share some of my favourite summer recipes that you can easily duplicate at home. During a recent afternoon hanging out we both discovered that during the warmer months we prefer “low maintenance meals” – grilled veggies and salads paired with protein or fish. But sometimes we can get into a salad rut, prepping the same version of the classic side, which eventually just gets boring. I’ve created a delicious Grilled Corn & Strawberry Radish Salad that has been a hit with my cottage guests and followers over on my website SpooningNForking.comNot too surprising because who doesn’t love summer corn and fresh strawberries?

Grilled Corn and Strawberry Radish Salad

PREP: 20 MIN
COOKING: 5 MIN

INGREDIENTS DIRECTIONS
3 cobs of corn
1 cup of sliced strawberries
4 radishes sliced (I used a mandolin)
1 handful of basil roughly chopped
2 tbsp of diced chives

DRESSING
3 tbsp of sherry vinegar
6 tbsp of Evoo
1/2 tbsp on maple syrup
1tsp of salt
1/2 tsp of ground pepper


Turn on your grill to medium heat.  Remove your corn from the husk and place on grill rotating every 3-5 min.  You want to char your corn but not kill it!! See note below if you do not have a grill.

  1. While your corn is cooking (and you are keeping and eye on it) slice your strawberries, radish a prepare your herbs.
  2. In a separate mixing bowl combine all of your dressing ingredients.
  3. Once your corn is cooked, let cool slightly until you can handle it comfortably.  Stand your corn on your cutting board, then with a sharp knife, slice down along the cob.  Not going to lie…this is messy AF…but worth it…so don’t use canned corn!!!!!
  4. Combine all your ingredients into your salad bowl, add dressing and toss.
  5. Try not to eat all at once 😉

NOTE: If you do not have a grill of some sort, you can do this in a large skillet on high heat or directly on top of a gas burner.

Jax Coco Cocktail Recipes: The Pineapple Raspberry Rum Refresher

I think it’s safe to say that people are now officially fed up of the frigid temperatures we’ve been experiencing this winter. Some have been blessed with the ability to escape this so-called tundra and head south to warmer climates, but then there are others who are not as lucky and looking for anything to pull them out of their seasonal depression. If you can’t get to a tropical destination this season, you can always crank up the heat at home and pretend you’re there and sip this tasty (and healthy) cocktail made with my go-to coconut water brand, Jax Coco. There are several brands currently on the market, and believe me I’ve tried every single one, but Jax Coco has definitely changed the game in regards to taste. I’ve spent the last month or so taste testing this product and have fallen madly in love – from it’s smooth filtered taste to it’s chic and minimalist design of the premium glass bottling.

When I first began blogging one of my first wellness posts was on the benefits of coconuts. I drink several litres of this tasty alternative to sport  drinks weekly due to it’s super hydrating capabilities, in addition to it’s high levels of potassium and electrolytes. This sweet, clear and slightly nut flavoured liquid is fantastic on it’s own, but I have recently discovered how amazing it is mixed with cocktails. As we all know, alcoholic bevvies can be extremely dehydrating, but being able to hydrate your body while consuming your favourite cocktails is brilliant, no? I’ve tried out a few recipes with one of my besties Christian Thompson of ChristianConfidential.com and the Pineapple Raspberry Rum Refresher was the clear winner for the both of us. It’s an aesthetically good looking drink, simple to make and tastes delish.

Jax Coco Pineapple Rum Refresher

Ingredients:

2 Tbsps raspberries (fresh or frozen) 1/4 cup

Ice cubes

3 ozs Jax Coco coconut water

3 ozs Pineapple juice

1.5 ozs Coconut flavoured rum (Malibu)

2 mint leaves (fresh)

Add ice cubes, coconut water, pineapple juice and rum into a shaker. Muddle, or gently mash raspberries and add to shaker. Mix again. Pour into a rocks glass, garnish with fresh mint leaves and enjoy!

New Year’s Eve Sparking Cocktails

Entertaining friends and family at home this New Year’s Eve? Why not jazz up the traditional glass of champers/sparkling wine for your guests with any of these easy to make bubbly-based cocktails.

Sparkling Cinnamon Apple Cocktail

4 oz. Lunetta Prosecco

2 oz. Lindemans Pomme (Green Apple) lambic

1/2 oz. Monin Honey Syrup

2 oz. Hand shaken whipped cream

Dip rim of Champagne flute into honey syrup and then into cinnamon sugar to rim the glass. Pour honey syrup, Prosecco and lambic into a shaker over ice. Stir with spoon 10 times. Strain into Champagne flute. Top with two spoonfuls of whipped cream. Dust with cinnamon sugar.

Perrier-Jouët Rose

1/4 oz. Rose Water

1 Sugar Cube

3 dashes of fresh pomegranate juice

Perrier-Jouët Belle Epoque/Brut

Place the sugar cube in the bottom of a Champagne flute. Saturate it with rose water. Carefully top off with Perrier-Jouët Belle Epoque/Brut and add pomegranate juice. Garnish with dry baby rose buds.

Lemon Drop Champagne Punch

3 lemons, room temperature

1/2 cup of sugar

3/4 cup of best quality vodka

4 oz. of candied lemon peels

Perrier-Jouët Fraise Sauvage

2 oz. Perrier-Jouët Belle Epoque/Brut

1 1/4 oz. vodka

3/4 oz. Fresh squeezed lemon juice

1/4 oz. Simple Syrup

1 Whole strawberry

In a bottom of a mixing glass muddle the strawberry into a purée. Add all ingredients except Perrier-Jouët Belle Epoque. Add ice, cover and shake vigorously for 7-8 seconds. Pour Perrier-Jouët Belle Epoque/Brut into a chilled cocktail-martini glass and pour the cocktail over it. Garnish with half a strawberry.

1/4 oz. Brandy

3/4 oz. Ruby Port

3/4 oz. Orange Juice

4 oz. Champagne/Sparkling Wine
