Easy Summer Recipes | Pomegranate Mango Guacamole

Pomegranate Mango Guacamole

When it comes to Summer entertaining, there is nothing I love more than a really well made guacamole. It’s super easy to make, a tasty guilt-free snack, can be prepared tons of different ways based on your taste preferences and is always sure to be a hit at any gathering. I am beyond obsessed with avocados and could live off guacamole every day if I needed to. From time to time I like to put a little spin on the classic “guac” during the Summertime and substitute diced tomatoes with pomegranate and mangoes, which is a little trick I picked up from Pinterest. The sweet smoothness of the mangos and crunchiness of the pomegranate seeds work extremely well with the spicy avocado blend. And the colourful dish is pretty easy on the eyes as well! So delicious it can be eaten entirely on it’s own but I love to pair it with Lundberg Sea Salt chips or multigrain scoops.

What You’ll Need

  • 2 Serrano Chillies – stems removed, sliced into thin rings *I remove the seeds because I can’t handle the extra heat!
  • 2 Cloves of Garlic –  peeled and finely diced
  • 1 Medium White Onion – peeled and finely diced
  • 1/2 Cup of Chopped Cilantro Leaves
  • 4 Ripe Avocados
  • 3/4 Cup of Frozen or Fresh Mango – cut into small cubes
  • 3/4 Cup of Pomegranate Seeds
  • 1 Tsp. of Coarse Sea Salt
  • *Serves approximately 8-10

It is best if you keep the aromatics together when creating this recipe, so place  the chillies, diced onion and garlic together and release the juices by pounding them in a motar and pestle. If you don’t have one at home, you can either use a food processor or simply toss the contents into a ziplock bag and beat with a rolling pin. Add in the cilantro and pound with the other aromatics.

Cut the avocados in half around the pit, remove the pit and scoop out the flesh. Place the flesh of two avocados into the motar and pestle and pound until smooth. Then cut the remaining two avocados into chunks 1/2 an inch big. Combine both the chunky and smooth avocados with the onion mix, stir in the mango cubes, pomegranate seeds and salt. Add more of the latter for taste if necessary and that’s it. Hope you enjoy!

The “Not-So-Basic”…Basics | What I’m Wearing

7 for all Mankind

It’s officially Spring and a staple in my warm weather wardrobe (how’s that for alliteration) this time of the year is white denim. If it weren’t for Toronto’s horrendous slushy and snow filled winters, I would be hard pressed to wear them year round.  A flattering pair of white denim should be a basic in everyone’s closet – no excuses. It is what I like to refer to as the “Not-So-Basic” basic item that allows for a very casual daytime Summer look but if paired with a few statement pieces, it can quickly be transformed into a chic evening outfit.

If you took a peek inside my closet, my obsession with white denim would be clear; you would find several pairs from Boyfriend, Distressed, Relaxed Fit, Cropped, Shorts and of course the Classic Skinny in my denim dossier. On a recent day date with my bestie Shane, I paired a classic moto vest, an athletic inspired trapeze tee and my go-to pair of second skin white jeans from 7 for All Mankind.

Orange Crush | What I’m Wearing

Orange Crush

Us women spend grueling hours in the gym all winter for one thing…to obtain a toned Summer body. My mother always tells me “flaunt your best assets”, and just like her, I choose to show off my stems 😉 Meaning, from now till early September, you will probably see me rocking an array of different shorts. I fell immediately in love with these orange and tan babies from Ann Taylor   (which also comes in black and white btw) and rocked them with some dope platform sandals, a simple white tank and one of my fave Hermes leather belts.

Beyonce + H&M Summer 2013 Campaign

Since the end of 2012, Beyonce has been literally EVERYWHERE from ultra sexy mag covers (Hello GQ!), singing at President Obama’s Inaugeration, participating in Gucci’s “Chime for Change”, her doc film “Life is But a Dream” and of course her epic performance at the Super Bowl this past January. But what’s the latest for Queen Bey? Her upcoming Summer collaboration line with Swedish retail giant H&M, which will consist of commercials and ads timed perfectly with her tour “The Mrs. Carter Show” (kicks off later this month on April 15th). The star’s commercial for the brand will also feature a brand new track from the singer titled, “Standing on the Sun”.

In line with any project Mrs. Knowles-Carter is aligned with, she was very involved in the collabo and lent more than just her face – she also participated in designing the collection: “I’ve always liked H&M’s focus on fun and affordable fashion. I really loved the concept we collaborated on, exploring the different emotions of women represented by the four elements – fire, water, earth, and winter. It was a beautiful shoot on a tropical island. It felt more like making a video than a commercial.” Bey said in a recent release. This is not hard to believe at all seeing as though the campaign was shot in the Bahamas (Nassau) and was shot by famed photog duo Inez and Vinoodh. The commercial was directly by Swedish director Jonas Akelund, who has directed some of music vids for the singer in the past.

In the campaign Beyonce is wearing some amazing key pieces perfect for the beach and summer – think flowy sundresses, cute fringed bikini’s and an amazing bodycon dress. I literally cannot wait to get my hands on some of the items.
